筆者試過為了不出街吃Oily food，有一段長時間不與友人見面，所有飯局一律byebye，源於出街食飯基本沒有餐單上的食物供選擇。後期為了社交關係，再次出席飯局，由於長期節際關係，什麼東西又放進口，結果回家自責好幾天。</p>

					<description><![CDATA[<p>太平洋海產之戰 &#160; 電影《悍戰太平洋》（Pacific Rim）中太平洋深處有一個傳送門，把外星怪獸傳來地球，在各環太平洋地區展開襲擊。電影情節雖誇張，但南北太平洋確實貫通亞非歐美各國，更是歷史有名戰場，如珍珠港事件、中途島海戰等。近年卻上演「海鮮戰爭」，中、日、韓、台、美均在太平洋海域爭奪珍貴的海產資源、賺取厚利。而日本更有傳媒報道指守法的日本漁船，在日本海範圍被疑似北韓漁船以武器驅趕，為的是奪取海中的甜蝦及魷魚。 &#160; 鯖魚養活全球 &#160; 鯖魚多於大西洋及西太平洋聚居。北大西洋有挪威、冰島及歐盟成員國為北大西洋鯖（又叫挪威鯖）爭奪配額。白腹鯖（即日本鯖）及花腹鯖（即澳洲鯖）則在太平洋引發爭奪戰。鯖魚成長期短，四季都有魚獲，只是冬季油脂更豐富，味道更甘香，加上豐富的奧米加3脂肪酸、維他命B12等，長期被大規模捕撈。大西洋已實施配額防止鯖魚絕種，日本亦在魚獲緊張的地區奉行只有指定時節才可以傳統一支釣方式捕魚。 &#160; 愛地球的主廚James Oakley &#160; 鯖魚的魚肉很易腐壞，因此必須於捕獲後即時冷凍處理或於24小時內烹調。鹽醃、煙燻、熟成、鹽醋醃漬、鹽燒、焗、烤等都是較常煮法。今次我請來了 Cordis 酒店 Alibi 餐廳主廚 Chef James Oakley 為我們示範一款鯖魚菜式。Chef James 曾於Gordon Ramsay 的餐廳實習，師承英國名廚Jeremy Medley。James是創作型廚師，菜式予人無限驚喜。關顧環保及可持續發展的他，更熱中於發掘新食材，如以蟲入饋，試驗未來環保食材菜式。餐廳的 a la carte menu 亦全部選用取得國際認證的可持續海產。 醃鯖魚配藜麥脆片伴青瓜醬 &#160; 材料 &#160; 青瓜汁 &#160; 青瓜                                      1公斤 青檸汁                                  40克 青檸皮蓉                              2個 糖                                          40克 &#160; 青瓜醬汁 &#160; 青瓜汁                                  560克 寒天粉 [&#8230;]</p>

鯖魚多於大西洋及西太平洋聚居。北大西洋有挪威、冰島及歐盟成員國為北大西洋鯖（又叫挪威鯖）爭奪配額。白腹鯖（即日本鯖）及花腹鯖（即澳洲鯖）則在太平洋引發爭奪戰。鯖魚成長期短，四季都有魚獲，只是冬季油脂更豐富，味道更甘香，加上豐富的奧米加3脂肪酸、維他命B12等，長期被大規模捕撈。大西洋已實施配額防止鯖魚絕種，日本亦在魚獲緊張的地區奉行只有指定時節才可以傳統一支釣方式捕魚。<br />

<h2>愛地球的主廚James Oakley</h2>
<p>&nbsp;<br />
鯖魚的魚肉很易腐壞，因此必須於捕獲後即時冷凍處理或於24小時內烹調。鹽醃、煙燻、熟成、鹽醋醃漬、鹽燒、焗、烤等都是較常煮法。今次我請來了 Cordis 酒店 Alibi 餐廳主廚 Chef James Oakley 為我們示範一款鯖魚菜式。Chef James 曾於Gordon Ramsay 的餐廳實習，師承英國名廚Jeremy Medley。James是創作型廚師，菜式予人無限驚喜。關顧環保及可持續發展的他，更熱中於發掘新食材，如以蟲入饋，試驗未來環保食材菜式。餐廳的 a la carte menu 亦全部選用取得國際認證的可持續海產。</p>

<h2>醃鯖魚配藜麥脆片伴青瓜醬</h2>

&nbsp;<br />
青瓜                                      1公斤<br />
青檸汁                                  40克<br />
青檸皮蓉                              2個<br />
糖                                          40克<br />
&nbsp;<br />
<u>青瓜醬汁</u><br />
&nbsp;<br />
青瓜汁                                  560克<br />
寒天粉                                  8克<br />
&nbsp;<br />
<u>藜麥脆片</u><br />
&nbsp;<br />
藜麥                                      200克<br />
水                                          1升<br />
&nbsp;<br />
<u>鯖魚</u><br />
&nbsp;<br />
新鮮鯖魚柳                         1片<br />
青檸                                      1個<br />
糖、鹽      少許<br />
&nbsp;<br />
&nbsp;<br />
做法</p>
<li>
混合青瓜汁所需材料並以篩子過濾</li>
<li>
將320g青瓜汁煮沸，拌入寒天粉，直至寒天粉完全溶解，置於容器中冷卻定型。</li>
<li>
將餘下的青瓜汁攪拌直至順滑，置於冰箱中備用。</li>
<li>
在水中煲煮藜麥直到熟透及柔軟，攪拌直至順滑。</li>
<li>
在烘焙紙上塗上薄薄的藜麥，然後在55℃的焗爐箱中烤焗4小時（或以180℃滾油油炸）</li>
<li>
在鯖魚肉的一面均勻塗上青檸皮蓉、青檸汁、糖和鹽，醃5分鐘。</li>
<li>
然後反轉至鯖魚皮的一面，用火槍燒香鯖魚皮。</li>
<li>最後擺碟，完成。</li>
